Easy Potato Bacon Cheddar Soup! *It’s what’s for dinner!*

Tonight I remembered how much I like reading blogs that share the writers favorite tried and true recipes. Like most people I am busy almost all of the time, and coming up with dinner ideas is sometimes last on my very long list.

So…tonight I am going to share with you. This is what I am making right now!

Potato & Smoked Bacon Cheddar Soup!

(One of the best thing about this dish is that it is flexible. Like my Gran I never really measure much, just eyeball it and tweak it to be the way you like it!) This can serve anywhere from one to as many people as you’d like.


3 large russet potatoes (1 large russet potato per serving.-add more for more people) Peel & dice into small chunks.

1 large onion diced (I like Vidalia)

4 14.5 oz. cans of chicken broth-you can make this fresh or cheat and use canned -it is yummy either way.

3 cloves of garlic diced

1 package of your favorite bacon (I like Applewood Smoked bacon from Niman Ranch and it’s nitrate free too!) You can cheat and use precooked bacon if you are in a rush.

2 tablespoons of butter

dash of smoke seasoning to taste.

1-3 cups of cream or half and half to taste.

Cheddar cheese to taste (I like Cracker Barrel brand aged new york cheddar.)

Melt the butter in a large saucepan, then saute the onion, garlic & potatoes until beginning to brown. Add in the Chicken broth, bacon (keeping out a little for garnish) and a dash of smoke flavoring. Cook until the potatoes are tender. Then add the cream.

To thicken the soup give a few quick blends with a stick beater, or stir in about a half a cup instant potato flakes, or more if you like it thicker.

Top with extra bacon and shredded cheese! Serve with crusty warm french bread…YUM!

Hope it cools off a bit your way and begins to look a lot more like fall if not like Christmas (of course snow in Southern CA in October would mean we are probably in an ICE AGE! That would be bad, I can do without the return of mammoths and saber-tooth lions.)
I think the weather in CA would be weird for me, as I love snow and the cold and things like wool socks/mittens (the knitter in me I suppose) and Carhartt barn-coats (mine is very "fashionable"... it's red and black and one of my sons has a purple one). Winter is my favorite time of year. If you have ever read the Little House on the Prairie series by Laura Ingalls Wilder you may be familiar with a little town named De Smet, SD where the author spend her teen years and early married life. The story named "The Long Winter" (all about a horrible winter with 7 months straight of blizzards every few days and temps. that got down to -60 degrees or more)... well that story actually happed about 40 miles from where we live, about 125 years or so ago.

By the way, I really love your vampire inspired stuff... it's so cool. When we lived in Lubbock,TX, I used to be able to buy a wine called Vampire (my favorite was the merlot) and it really was from Transylvania. I still have several bottles that I've hung onto waiting for my brother-in-law to visit from NM... my 11 year old niece might be legal to have some before that actually happens though.

Me, I was inspired by a "local" from your neck of the woods, Johnny Depp (and his favorite alter ego, Captain Jack Sparrow... goofy, but too adorable for his own good) to do a line of men's bath products called Pirate Lord (TM). (Which is scented like I imagine his neck might smell like???? Not that I would ever get to find that out personally in a million years. If you ever get so lucky as to bump into him at the grocery store or something, you will have to let me know what he smelled like in the name of product research. I know, I probably have it all wrong.... probably smells like kiddie stuff; chocolate chip cookies, potato chips, PB&J, lawn clippings and dirt from playing with his children outside in the backyard... basically like a dad!)

As for staying warm... my 6 year old son,Charlie, is sick and running a fever around 101 F and being as he's sick and has autism... insists on sleeping with us tonight (and usually 3-4 nights per week). It will be like snuggling with the wood-stove!

It's my feet that usually get cold... glad I have dogs who are good snugglers too. The two mother dogs with puppies are otherwise occupied, but the 2 males (2 yr old Cowboy and 8 month old Sparky) and the 7 month old female pup (Sasha) are very good at sleeping on feet if you can stop the pups from trying to gnosh on your socks as a teething toy... for some reason Sparky especially likes to chew fabrics. ( I know it seems a lot of dogs... as part of the farm we raise a few Miniature Australian Shepherds (Aussies that are the size of a Sheltie), to help cover the feed and vet expenses for the goat herd... until such time my soap business can do some of that.) Allie and Kacy just happened to get pregnant a week apart and whelp a week apart down to the day. The puppies are 1 month and 3 weeks old respectively. Kacy has 8 and Allie has 4. I can't wait until they are weaned and off to new homes... the income will be helpful... I have a vet bill I need to pay off and I want them all placed in their new families before Christmas too. But mostly I can't wait until my princess, Kacy, can be back to being my lapdog again, I miss her. (Total diva... got her a year ago from a breeder in OK, she was 18 months old, spoiled rotten... and of course the weather was a shock. The first winter, she wore doggy sweaters 24/7 until a week before her first litter arrived (Feb. 27th)... they don't make doggy maternity clothes or nursing bras. But she insisted the sweaters HAD TO BE PINK! Shredded any that weren't. We probably shouldn't have, but we decided if she wanted to be a girly-girl and only wear pink it was okay.)
(*I have 2 nice pairs of wool socks badly in need of darning when my husband gets time to do it... something his grandmother taught him... mine taught me to sew, knit, crochet and cook/bake... so, odd skill for a man, yes... handy to have around... he also builds things like sheds, hay-feeders and moves large heavy objects... you bet! Maybe if we get snowed in he'll have time.)

Our Mickey D's doesn't even have soup. That's Southern California for you. Up until this week it has been too hot for soup. I was celebrating inside when I made this-so thankful to be cooler. (very recently it was 112)
I am a bit jealous of your snow ;)

Looks and sounds delicious. I love soups like this. (and your pictures too!) Potato and Cheddar or Cheddar and Broccoli or Cauliflower are my favorites.

One of the few time's I've eaten out at a fast food place lately, I was so disappointed they didn't have their soup until like November... it was cold and wet and windy out... the first real "fall" day we'd had....just the idea of wrapping my cold hands around a cup of soup, while my youngest ran off some steam on the play-land equipment as the rain poured outside. Who wouldn't want soup in that weather? Normally I make some at home, but we were out running errands that day.

(*By November we usually have 6-12 inches of snow already in South Dakota. In fact we got some snow Friday night (that melted) and are now expecting 5 inches tonight... it's not even mid October yet. I couldn't for the life of me figure out WHY McD's would wait that long to have soup???? Crazy!)
